Botrytis selection, aka 'Noble Rot' - process where mold draws water out of the affected grapes, leaving an ultra-concentrated nectar behind. In the field during Riesling harvest at Dr. Loosen's estate vineyard, these moldy grapes are painstakingly separated into three quality categories. Pictured here, Auslese Gold Capsule, a luscious wine made from very ripe, late harvested grapes that have just begun to be shriveled by botrytis.
